Cooking directions
1. Slice the shin. In a pan, fry each side very quickly with olive oil.
2. Brown the minced onions with butter in a casserole. When onions are golden, add the
shin, white wine, mustard, crumbled gingerbread, thyme, bay leaves and sliced garlic.
3. Simmer at low heat for about one hour, scrapping out the bottom of the casserole with a
wooden spoon to avoid sticking.
