PORK TENDERLOIN IN WHOLEGRAIN MUSTARD

Serves 4

Ingredients :

- 1 pork tenderloin about 500 g/17.5 oz
- 4 teaspoons veal stock
- 1 teaspoon wholegrain mustard
- 1 cup water
- 1 glass white wine
- 1 onion
- 1 tablespoon chopped parsley
- 1 teaspoon olive oil
- bay leaf
- thyme
- salt
- pepper

The tenderloin can also be baked with mustard, using the same recipe ingredients.

Cooking directions

1. Cut the pork tenderloin into 2-inch pieces.
2. Peel and slice thinly the onion.
3. In a pan, brown the onions in the oil.
4. Add the tenderloin and continue cooking at medium heat for about 5 minutes. Add salt and
pepper.
5. Add the water, white wine, mustard and cubes of veal stock.
6. Mix and continue cooking at medium heat for 10 minutes. Serve warm.
