VEAL KIDNEYS IN MUSTARD SAUCE

time 10 min  casserole 15 min

Serves 6

Ingredients :

- veal kidneys about 1 kg/2.2 lbs
- 1 onion
- 3 garlic cloves
- 1 tablespoon olive oil
- 1 bouquet garni
- 3 tablespoons mustard
- 1 wine glass of white dry wine
- 1 tablespoon crème fraîche
- 1 tablespoon chopped chives
- salt
- pepper

astuce !

Some gourmets prefer medium rare kidneys. You just need to fry and reserve them. Simmer the sauce for 10 minutes and add the kidneys 5 min before the end of cooking time.

Cooking directions

1. Pour the olive oil in a casserole.
2. Add the veal kidneys, previously diced, stir and add the finely minced onions and garlic.
Leave them to fry.
3. Add the bouquet garni, mustard, white dry wine and simmer for 15 minutes. Stir frequently.
4. Add salt, pepper and a tablespoon of crème fraîche.
5. Stir and sprinkle with chopped chives before serving veal kidneys with mustard sauce.
