
Widely spread in Asia, many species of this yellow-flowered cruciferous plant were already cultivated by the Chinese 3000 years ago. They were the first ones to grind its seeds and to mix them with an acid juice, the verjuice, extracted from grapes to obtain mustard.
Dukes of Burgundy discovered mustard in the 14th century, during the lavish celebrations of Rouvres. It became a synonym of wealth and refinement. The mustard-making process has been strictly regulated since 1930.
